I’ve been to Salt Bistro in Boulder several times and have consistently been impressed by chef Bradford Heap’s menu and commitment to local producers. (See our August review.) But, in reviewing Salt, I was also dismayed that a restaurant so dedicated to buying local listed just three Colorado wines.

I’m happy to report that’s all changed. Following a recent tour through Colorado’s wine country, Salt’s beverage director, Evan Faber, revamped the wine list to include five local whites by the glass and six local reds.

Selections include sips from Denver’s Infinite Monkey Theorem (whose winemaker, Ben Parsons, is widely regarded as the best in the state), organic producer Jack Rabbit Hill, and Canyon Wind Cellars, one of the state’s oldest family-run wineries.

My favorites from the list: the smooth Jack Rabbit Hill M&N–a blend of Pinot Noir and Pinot Meunier–and the full-bodied Infinite Monkey Theorem Chardonnay.
