Healthy Eats: Modmarket

For anyone trying to stick to an eat-healthy resolution, take note: Modmarket, a fast-casual joint serving good-for-you eats, has opened its first location in Denver. If that sounds like a yawner, you've simply got to experience Modmarket's super-fresh, delicious menu, which changes seasonally (order the heavenly cashew-butternut-squash soup before it disappears until next fall).

My staples include the fig pizza—a mix of cheeses, arugula, and figs on a thin, whole-grain crust—and the crunchy Mongolian salad with greens, red cabbage, soy nuts, scallions, edamame, and wontons with a slightly spicy, orange-mint-chile dressing. The bonus: This is affordable, real food—no artificial sweeteners, no additives—with prices running from $4 to $10.50.

I became a Modmarket convert when I dined at the original location in Boulder, and I'm thrilled that Denver now has one to call its own.

Extra: Owners Rob McColgan and Anthony Pigliacampo are all about transparency, hence the open kitchen and the nutritional information for your order printed on your receipt.
