Lunch Biz: Parsley's Texture Tuna Sandwich

I'm always on the hunt for sandwiches that both taste good and are a step beyond what I could put together at home. Denver has plenty of options—from Masterpiece Delicatessen's smoked turkey with Brie, pears, and cranberry honey to any of Modmarket's tasty versions.

My recent addiction is the texture tuna sandwich at Parsley. The Golden Triangle spot serves some of the most inspired lunch options around—with organic ingredients to boot. The sandwich starts simply enough: A thin ciabatta bun is layered with tuna, cucumber, tomato, red onion, and chipotle sauce. The tuna, however, is extraordinary: Ginger, miso, black sesame seeds, and red-pepper aïoli season the fish in a flavorful blend with just the right amount of kick.

If you're feeling really adventurous, order the lox and guacamole sandwich. It sounds like an odd combination, but it works because of the lemon, garlic, and green chilis in the guacamole—perfect add-ons for a salty fish.
