An impromptu lunch at Udi’s Bread Cafe in Stapleton led to a delicious discovery: the eggplant panino. This savory (and, by the way, enormous) sandwich combines eggplant that’s baked until caramelized, sweet roasted red peppers, an ample amount of goat cheese, and a swath of aïoli between two pieces of grilled rustico bread.

Often eggplant sandwiches are riffs on eggplant Parmesan, but this was a welcome departure. Lusty, earthy, and rich—bet you can guess what I’m having for lunch again today.
