Trendspotting: Barrels Find New Life

Yesterday's Tasting Table detailed the second life of whiskey barrels. Here in Colorado (aka Craft Beer Land), we know a little something about that: For years, Stranahan's vessels have been prized by local brewers. (That is, until recently).

Now, there's another showcase for barrels—this time, wine barrels—in the works. On Tuesday, November 8, Coohills, a French-influenced, Colorado-centric restaurant, will open its doors at 1400 Wewatta St. Here, Tom and Diane Coohill, who hail from the Atlanta dining scene, are making good use of spent barrels. The restaurant's house-made bread, charcuterie, and pizzas (we like the sound of the dried squash, Cure Farms spinach, and Taleggio combo) will be served on the reclaimed wood. Every board is different and was handcrafted in Lakewood by Brad Evans of Alpine Wine Design.

Bonus: The serving pieces are a design element reinforced by the restaurant's chandelier—a six-foot-tall, 28-year-old Cabernet vine excavated from Simi Winery in Sonoma.
