Jessica, Jill, and Jennifer Emich (aka the triplets of the late-Trilogy Wine Bar and Lounge) are back in Boulder after a three year hiatus. Their newest venture, Shine Restaurant & Gathering Place (set in the short-lived Los Oasis Latin Grill & Cerveceria location), is a holistic, community-centered approach to dining.
In a departure from the trendy, wine-driven Trilogy, the versatile sisters’ new menu focuses on “nutritionally inspired American comfort food” as well as house-brewed beers, a small selection of sustainably farmed wines, and an array of hand-crafted potions and elixirs designed to “open the body, mind, and heart to promote well being and bliss.”
That's only $1 per issue!
The menu contains both hits and misses. Salads are overdressed and soups are much too thick, but the juicy Leistekow grass-fed beef burger (pictured) is a must-order item. The patty has just the right smoke, and it arrives topped with lettuce, tomato, cheddar, caramelized onion, and a creamy avocado aïoli. Also memorable: the super tender chicken sandwich.
