The World Series is almost here (the first game is October 24), and even though the Colorado Rockies couldn’t get it done this season, their fans have something else to get excited about. No, we didn’t discover the fastball to win, but we did dream up a hot dog that could.
In a search for Denver's official hot dog (why not? We already have an omelet, the Windy City has the Chicago Dog, Boston has baked beans...) we polled some of our favorite places—the Über Sausage, Billy's Gourmet Hot Dogs, Steve's Snappin' Dogs, and Biker Jim's Gourmet Dogs—and asked what they thought. With that, the Denver dog was born:
First, take a tortilla, insists Steve Ballas, from Steve's Snappin' Dogs, "We have such a Mexican food influence, it can't be a Denver dog without the tortilla." For the wiener itself, it's gotta be the bison dog from the Über Sausage. Add sliced bacon, lettuce, and tomato (more contributions from Ballas) and creamy cheddar and barbecue sauces from Billy's. The final toppings come from Jim Pittenger of Biker Jim's: "caramelized onions and, of course, some jalapeños and banana peppers—that is very Denver." Wrap it all up and eat like a burrito.
We may not have a killer baseball team, but we have a (fictional) hot dog that can compete with anyone.

Been doing this for a long time!
Ok, first off, Biker Jim's is one of the best dogs I've ever had. Lots (but not too much) of customization make the place a really great lunch or dinner spot.
That said, I've actually been using tortillas on brats since college. It started out with a buddy who had no bread other than a tortilla. We found that not only does it taste delicious, it also holds in any toppings (and grease) with ease. I've since converted several friends on this idea as well, reluctant as they were.
Now I'm hungry, and I just ate!

THE ideal dog for Denver would definitely be one wrapped in a tortilla... topped with green chili, sauteed peppers and onions and some black beans.
Crucial to keep the Denver Mexican flare within a signature Denver Dog!

I have not tried hot dogs in tortillas but it sounds fantastic!!!
My ideal Denver hot dog would be as follows:
- Bun
- Brat wrapped on bacon on the grill
- Mustard , chopped onions and tomato.
- Refried Beans
- Green Chili Salsa / Salsa
- Cheese (american shredded cheese , oryour preference
-Crushed chips (E.I Ruffles Queso, Lays, BBQ Chips.)

I would start with bison or elk for the actual hotdog. Then I owuld use Ed McCaffrey mustard, relish, and ketchup. For the bread I would use a local baker and pile on some local cheese.
And the Rox will be back next year!!!

Seriously, all one needs is two gourmet hot dogs in this world: 1) Giant beast of a dog covered in tangy yellow mustard, doused in raw chopped onions, and then smothered in meaty chili sauce topped with yellow shredded cheese; 2) Mac n Cheese dog- a hot dog encased in Mac n Cheese that has been mixed with smoked bacon- delicious and a nice throwback to being a kid

Definitely would start with a bison dog. Bison is one of the best red meats out there. I would use a white corn tortilla, add cotija cheese, carmelized onions, some chopped anaheim and poblano peppers and finish it with fresh lettuce, tomato, and cilantro

Buffalo would be a must and I smothered in some green chili, a Denver staple. If you wrapped in a tortilla it would be perfect :)
Denver Dog...??
Personally, I feel a dog just needs something a bit fluffier than a tortilla, though I do love most anything on a tortilla. I like the buffalo meat, sauces and use of jalapeno, caramelized onion and banana peps listed, but would also make a strong push for some avocado on this bad boy. Ah - yes - now I know, the perfect wrapping for this beastly dog would have to be an empandada. Boom. Done.

I had something similar to this 20 years ago in San Diego. Their version included chile. Yum!

All I can say is - elk jalepeno dog. Its so good. Add the cream cheese and grilled onions and its a winner every time! Im so glad they come to the farmers market on south pearl every sunday, I can get my fix!

A Denver Dog is a Great Idea
For me the perfect dog is a bison sausage covered with green chili and cheese wrapped in a corn tortilla.

Oh, everyone has some great ideas!! I do like the idea of buffalo/bison, fresh veggies, a good wine mustard.....
And To get to eat at Texas De Brazil would be an absolute treat!
