Morning Eats: Mmm...Coffee's Granola

Every couple of weeks, I make a double or triple batch of granola. This toasty jumble of oats, flaked coconut, nuts, and dried fruit means that I almost never find a bowl that lives up to what I've got at home. That is, until yesterday.

On the recommendation of friends, I visited Mmm...Coffee with the sole goal of tasting their granola (pictured). The cafe, which is tucked into an alcove off of Santa Fe Drive, strictly adheres to the Paleo diet. I was intrigued but skeptical, given that granola's base is usually oats, an ingredient that's shunned by the regimen. But Mmm...Coffee's version does more than make do, it improves upon the whole genre.

Owners Derek and Jami Fynboh toss together almond meal, shredded coconut, honey, coconut oil, vanilla, almonds, pecans, walnuts, sesame seeds, and pumpkin seeds. The final effect is a breakfast staple that tastes hearty and pure, rich and sweet. Because the combination is only lightly baked, it's softer than normal granola, but the nuts still offer plenty of satisfying crunch.

The verdict: Paleo or otherwise, this is insanely good granola. I'm going back for more—and I'm going to see if I can duplicate the recipe in my own kitchen.
