News: A Glaze and Sushi Sasa Partnership

A week ago, I posted this blog about the March 1 closure of Glaze: the Baumcake Shoppe. But today, I'm thrilled to report that the Congress Park bakery will reopen, albeit with a different (and in my opinion, even better) bent. In the coming weeks, Glaze will transform from a Japanese bakery to a high-end sushi and dessert bar.

The force behind the sushi side of the concept is none other than Wayne Conwell of the much-loved Sushi Sasa. "Wayne approached me," Glaze co-owner Heather Alcott says. "He's been wanting to do another location, and this felt right. For me it’s a dream come true.” Since Conwell (who will soon serve Glaze's cakes on Sasa's dessert menu) first called Alcott, they've spent many hours going over details and plans. The two will seek a liquor license and rework the space so that it can function as a bakery (more baumcakes and macarons for everyone!), a sushi restaurant, and a dessert bar.

Alcott hopes for a relatively quick turnaround (45 days), and she says the name will contain both Glaze and Sushi Sasa since the two businesses have strong, established brands. Whatever the time frame and whatever the name, Denver—and Congress Park, in particular—is lucky to gain this collaboration.
