When we published our annual list of 25 Best Restaurants this month, one online commenter noted that she was disappointed by the lack of eateries with vegetarian or vegan focuses. As a pescatarian, I understand her struggles, but I’ve found Denver to be incredibly accommodating—and creative—with dishes that steer away from animals.

Take Atticus, DU’s newest Table to Tavern venture. The neighborhood spot is by no means meat-free, but sous-turned-executive chef Diego Coconati has introduced more seafood and vegetarian options to the menu over the past few months (try the cauliflower steak). And, for one night (Sunday), he’s going full-out with a seven-course vegan dinner.

Here’s a sampling of the night’s menu: spaghetti squash puttanesca; ribollita Tuscan soup with root vegetables, spinach, wild mushrooms, and pine nuts; wild mushroom risotto; poached pear and lemon mascarpone mousse.
