News came last night that Sarto’s opening chef Brian Laird has left the Jefferson Park restaurant. “It’s fair to say we’ve parted ways,” says co-owner Taylor Swallow.

Denver chef James Rugile, who has been cooking on the line for a couple months, will take over. There has been no discussion of titles yet, says Swallow, but Rugile, who is known for opening the late-Venue and working at Mizuna and Beast & Bottle, is a strong lead for the Italian eatery. Rugile will be backed up by Ivan Ceballos and Ryan Baldwin. There’s no word yet on where Laird will land.

Look for Sarto’s to host a Derby party and launch brunch after Mother’s Day.
