One in eight Colorado households is food insecure, yet Americans throw out $165 billion worth of food each year. To combat this problem, Denver organization We Don’t Waste rescues unused foodstuffs that would otherwise end up in a landfill—and now the nonprofit is entreating local chefs to help them transform their finds. Cooks like Mijo’s John Depierro and Daniel Asher of Root Down and Linger will create your recycled meal while local distilleries and breweries (think: Laws Whiskey House and Declaration Brewing Company) provide libations, and rock group Rob Drabkin plays live.
