Recipe—Candied Spiced Walnuts

November 2007

Ingredients:

  • 1/2 cup walnuts
  • 3/4 cup sugar
  • 1/4 cup corn syrup
  • 1/8 teaspoon lemon juice
  • 1 cup canola oil
  • pinch of salt
  • pinch of pepper
  • pinch of cinnamon
  • pinch of nutmeg
  • pinch of cloves

Cook sugar, corn syrup, and lemon juice in a heavy-bottom small saucepan to 240°. Meanwhile, heat oil in a small saucepan to 350° and maintain temp. When sugar has reached temp shut syrup solution off and add walnuts. Completely coat walnuts with syrup, remove with a slotted spoon, and drain off excess sugar. Add walnuts to the hot oil until nuts are toasted. Remove from oil, place in a bowl, and toss with spices. Place walnuts on a paper towel to drain off excess oil.
