RecipeCandied Spiced Walnuts By Sky Goble, pasty chef at the Adam's Mark Hotel November 2007 ![]() Ingredients:
Cook sugar, corn syrup, and lemon juice in a heavy-bottom small saucepan to 240°. Meanwhile, heat oil in a small saucepan to 350° and maintain temp. When sugar has reached temp shut syrup solution off and add walnuts. Completely coat walnuts with syrup, remove with a slotted spoon, and drain off excess sugar. Add walnuts to the hot oil until nuts are toasted. Remove from oil, place in a bowl, and toss with spices. Place walnuts on a paper towel to drain off excess oil. |
