With flourless chocolate cake appearing on most dessert menus (and completing the ho-hum trifecta of crème brûlée and bread pudding), you might be inclined to choose something more adventuresome. But at Indulge, a six-month-old French bistro, forgoing the delight would mean missing out on one of chef William Wahl's signature dishes. The French-born chef serves his version with a scoop of mango sorbet, a combination he likely picked up during his time cooking in the Caribbean. Order the decadent dessert with a cup of coffee (to sip while waiting for the cake to bake), and get your spoons ready for bites of rich, gooey chocolate and sprightly mango—a perfect combination that restores glory to a perennial also-ran. —AMF
