When you step into Zolo [2], Boulder's Southwestern grill, this Thursday, forget about ordering margaritas. The night is all about beer--specifically, Boulder's Avery Brewing Company [3] suds. For this night only, Zolo chef Rob Rosser has created a four-course menu to match Avery's brews. The salad combines spinach, pineapple, and fried crab; the entrée dishes up a succulent bacon-wrapped pork chop; and dessert roasts honey into a sweet crème brûlée. Each of the well-crafted courses includes two beer pairings and reminds diners just why Boulder food and drink have developed a national reputation.
