New Year's Duo: Colorado Bubbly and D Bar Chocolates

This New Year's Eve, in addition to celebrating the coming calendar year, honor our local bounty by toasting with a glass of Trinity Champagne from Palisade's Colorado Cellars [2] and a collection of gorgeous handmade chocolates from D Bar Desserts [3] in Denver. Trinity, currently the only sparkling wine produced in Colorado, is made in the traditional methode champenoise [4] style, which involves a secondary, in-the-bottle fermentation. The result? A semi-dry, food-friendly, brut-style wine with tiny, long-lasting bubbles. Pair the Trinity with a collection of chocolates from D Bar's Handmade Holiday line.
