Something we'd like to see more of around town is the biscuit sandwich. A weekend in Portland, Oregon, had us scarfing down saucer-sized pastries stacked with fried chicken, honey, mustard, and pickles from Pine State Biscuits [2]. A bit later we eyed Urban Farmer [3]'s cheddar-bacon biscuit with fried egg, sausage gravy, crispy chicken leg, and lemon marmalade and Violetta [4]'s grilled egg and cheese with local mushrooms. So many options, so little time. Of course, here in Denver we have our biscuit go-tos---namely Rise & Shine Biscuit Kitchen and Cafe [5] (check Twitter [6] for the du jour offering) and the Denver Biscuit Company [7]---but we'd like to see more full-service breakfast and brunch spots embrace the pastry outside of biscuits and gravy.
