Sustainable Seafood: Wyland's Ocean Blue

Eat at Wyland’s Ocean Blue [2] and help save the oceans? That's the idea behind the month-old seafood restaurant at the Shops at Northfield Stapleton.

Owned by Robert Wyland, a renowned marine wildlife artist and philanthropist, the upscale spot doubles as an art gallery for his highly stylized paintings and sculptures (he was one of Pixar’s artists for Finding Nemo [3]). A portion of all proceeds benefits the Wyland Foundation [4], a nonprofit dedicated to preserving the world’s oceans.

While I applaud Wyland's for serving only sustainable fish, I encourage you to keep it simple. Straightforward cooking is where chef Lucas Zoumas shines. Begin with the Dungeness crab cakes, a sautéed, delicate patty that lets the crab take center stage, or choose the broiled oysters dynamite, with fresh oysters, crab, and a touch of Sriracha-spiced Japanese mayo. Bypass dishes with cloying sauces and, instead, order a steamed Maine lobster, the king crab legs, or ask your server for fish simply sautéed in olive oil with a splash of lime.

 Tip: You can also help save the world’s marine wildlife by eating at the Disney-esque Guy Harvey’s Perfect Spot & Grill [5] next door. Harvey is an honorary member of Wyland’s foundation and has a foundation of his own.
