Sips: Black Cat's Wine List

Boulder’s Black Cat Farm Table Bistro [2] is well respected for its farm-to-table cuisine, which relies heavily on fruits and vegetables from chef Eric Skokan’s 70-acre farm [3]. Each menu highlights what’s current for that week—from the restaurant's farm, greenhouse, and/or root cellar.

What you might not be aware of is the restaurant’s equally impressive wine list. With almost 400 bottles available (unusual for a restaurant this size), the offerings include an extensive cross-section of vintages, from France, Italy, Germany, Austria, California, Colorado, Greece, and Slovenia. The bottles are selected to complement the bistro’s produce-driven cuisine. I recommend any of the crisp, food-friendly Grüner Veltliners from Austria; pair them with the beet salad and Stilton bread pudding.

Tip: To take full advantage of Black Cat’s menu, try the five-course tasting menu with wine pairings.
