When D Bar Desserts [2] first opened in 2008, pastry duo Keegan Gerhard [3] and Lisa Bailey [4] offered a Pavlova [5] on the menu. The delicate treat stood out among items such as the now-legendary cake and shake (which landed on our December 2008 cover) for its light, clean flavors. The cloud-like baked meringue provided a base for mango three ways (sorbet, salad, sauce), passion fruit, lemongrass, and a cool tropical granita. The best part? The satisfying dessert rang in at just 178 calories (Health Magazine [6] even gave it a thumbs up [7]).
Now, Gerhard has brought the guilt-free Pavlova back, and its tropical bent is perfectly suited to combat the summer heat.
First things first: Stop in for dinner, and don't miss ordering the avocado salad or the savory bombolini topped with Kobe tartare, tomatillo jam, and serrano peppers.
