The pop-up dining craze is in full swing at LoDo's Studio F [2]. This is the latest venture from chef James Mazzio, who also owns the fantastic (and adjoining) Red Star Deli [3]. Located in the Ice House Building (in the former home of Mise en Place cooking school), Studio F serves "culinary entertainment" by hosting events where diners interact with local and national rising-star chefs. The long tables, limited seating (40 people per dinner), and flowing wine turn dinner out into a raucous dinner party.

At April's inaugural dinner, chef Charles Dale (Terra Restaurant [4] in Santa Fe) served an elegant five-course meal paired with wines from Colorado's Sutcliffe Vineyards [5]. The menu: tuna tartare; asparagus soup with house-smoked ruby trout; scallop and pork belly with celery root purée; chile-rubbed beef short ribs with poblano mac and mushrooms (pictured); and butterscotch pot de crème with gingersnaps.

Heads up: The next dinner features the Inventing Room [6]'s Ian Kleinman, who is known for his forays into molecular gastronomy [7]. The menu for the May 18–26 dinners includes liquid nitrogen bruschetta popcorn and a cocktail of Maker's Mark, lime juice, and ginger beer poured over maple syrup cotton candy.
