Coming Soon: Bramble and Hare

If anyone knows the meaning of farm-to-table, it’s Eric Skokan, the chef-owner-farmer of Black Cat Bistro [2] and Black Cat Farm [3] in Boulder. Night after night, Skokan turns his exquisite farm-raised meats and organic produce into imaginative entrées at Black Cat. And, soon, there will be more to love: At the end of the month, Skokan will open Bramble and Hare at 1970 13th St., right next door to the Black Cat. The name—inspired by the Beatrix Potter books [4] the Skokans read to their children—is meant to remind diners that life is best when the simplest pleasures are cherished.

Expect Bramble and Hare’s farm-to-table fare to be more straightforward and everyday than that of Black Cat’s. (Think: freshly ground burgers from farm-raised beef topped with heirloom tomatoes or sliced beets). There will be a prix-fixe plate of the day and inspired seasonal soups, salads, cheeses, meats, and charcuterie, all straight from the farm. The 24-seat restaurant, decorated in salvaged pieces from around the farm, will also feature a walk-up window to serve diners too busy to sit down.

Tip: Check out Skokan’s new line of frozen farm-to-table entrées such as velvety beet soup, hearty slow-cooked pork chile, and tender veggie-filled quiche (pictured). All are available on Saturdays at Black Cat’s Farm Stand at Boulder’s Farmers’ Market [5].
