The Denver Food Truck scene [2] is deep enough to offer most any cuisine you could ask for—even a peanut butter and jelly sandwich. The lunch staple goes gourmet at Hey PB&J [3], a grape jelly–colored truck that serves souped-up versions [4] of the childhood favorite. Owner Kristy Skrabec makes her own almond and peanut butters [5] and slathers them into salty-sweet and crunchy-creamy combinations such as the Thai with peanut butter, orange marmalade, coconut, crushed peanuts, and fresh basil. The sandwiches are grilled and served hot. My top choice is the savory-sweet Barcelona: almond butter, house-made date jam, manchego, bacon, sherry caramelized onions.
Can't choose? You can hardly go wrong with the King, Elvis Presley's favorite [6] combo of peanut butter, bananas, clover honey, and applewood-smoked bacon.
