As if opening TAG Burger Bar [2] in Congress Park, running TAG Restaurant [3] and TAG Raw Bar [4] downtown, and consulting on the Colorado Convention Center [5]'s menu wasn't already a full-time job, chef Troy Guard has another project in the works. And this one is a two-parter.
This fall, on the corner of Broadway and Larimer, Guard will open a Mexican restaurant featuring his interpretation of the cuisine. Guard is adamant that this will not be a taco shop a la Pinche Taqueria [6]. Instead expect tamales, burritos, and enchiladas (here's hoping the goat enchilada he served at the Taste of the NFL [7] charity event in New Orleans will land on the menu).
Next door, Guard will open a pastry shop in tandem with Noah French, TAG's longtime pastry chef. With freshly baked breads, pastries, and a few light, savory items, Guard expects the casual spot to serve breakfast, lunch, and dinner. French will whip up the goodies (including an alleged world-class croissant) in an open kitchen.
Both spots are slated to open in October.
