The five-course menu includes potato gnocchi, baked goat cheese, and Colorado bass. It's a rare fine-dining opportunity for those suffering from serious allergies, which can make eating out difficult due to the risk of cross-contamination. Vesta isn't the only local spot working to accommodate the growing ranks of gluten-intolerant diners. Some of my favorite places around town to find good gluten-free eats include Tamayo , Root Down , Bittersweet , Encore on Colfax , WaterCourse Foods , Steuben's , and Colterra (which has a stand-alone gluten-free menu that is almost as large as the main one).
Tip: For regular updates on gluten-free restaurants in Colorado, check out Gluten Free Grades . In other news, a label was released last week that will help make Celiac sufferers confident the products they're buying are certified safe.
