Obsessed with all things pork? Snag a ticket to the Denver stop on Cochon 555 ’s U.S. tour. On March 9, the battle of heritage-breed pork  ensues with five of the city’s best chefs competing at the Ritz-Carlton in Denver . Chefs Justin Brunson of Old Major  and Masterpiece Delicatessen ; Steve Redzikowski of Acorn  and Oak at fourteenth ; Paul C. Reilly of Beast & Bottle ; Jennifer Jasinski of Rioja , Bistro Vendôme , and Euclid Hall ; and Bill Greenwood of Beano’s Cabin  will each cook six nose-to-tail dishes in hopes of scoring a coveted berth at the Grand Cochon  at this year’s Food & Wine Classic in Aspen. 
As a consumer, you not only get to taste all 30 inspired dishes, you’ll enjoy premium wines, beers, and spirits (including a cocktail from Four Roses Bourbon ) and a chance to sample the vintage ales of Goose Island Beer  paired with Hudson Valley foie gras . Enjoy a Punch Kings  competition between five local barkeeps, along with a taste of the perfect Manhattan, a portfolio of Crispin Ciders , and rare selections of mezcal. Counter the booze with luxurious nibbles—think à la minute, hand-chopped Creekstone Beef  from the tartare Bar; a Prosciutto di Parma tasting of various aged hams; fresh Rappahannock River Oysters ; boutique cheeses; and artisan breads from La Brea Bakery . As if that isn’t enough, the evening also includes dishes from a sixth heritage breed pig (which is butchered on site) and a signature dessert with Jeni’s Splendid ice creams .
