If you’re from Denver, you know the Wynkoop Brewery. The first brewpub in Colorado, the Wynkoop Brewery opened its doors in 1988 under the ownership of current Colorado Governor John Hickenlooper. Even though he is no longer a part of the Wynkoop, patrons will still see him drop by for lunch and a beer every now and then. Very literally a brewpub that “brewed” a neighborhood, the Wynkoop was a very large influence on the construction and building of the area now known as LoDo.
“Our passion is in taking things outside the norm,” says the brewery’s General Manager AJ Halbmaier. “We seek to brew beers that take you out of your element and make you realize there is so much more to be discovered in the craft beer realm. We also employ some of the most creative chefs to add another facet for guests to enjoy.”
But it’s not just the specialty beers or the delicious food that brings patrons in time and again. “We like to foster an environment where anyone can come, see a smile, have a great conversation and leave better than they did when they walked in the door.” That, right there, is what makes Wynkoop a Colorado cornerstone.
