Fisher Clark Deli 723 S. University Blvd., 303-722-2091, www.fisherclarkdeli.com Ever since Tables stopped serving lunch and the Upper Crust changed management (and later closed), we’ve been in search of the ultimate sandwich. It seems so easy, building a good sammy—bread, fresh fillings, and a spread of some sort—but for some reason there’s a dearth of great options around town. Finally, we’ve found a favorite. Fisher Clark Urban Delicatessen in Bonnie Brae gets the art of the sandwich—the balance of not too much, not too little—while remaining creative. The showstopper is the decadent Spanish ham and cheese with Serrano ham, paper-thin chorizo, Manchego cheese, arugula, and pear-onion jam stacked on the house-made focaccia. The combo is salty-sweet perfection—and rich enough to feed two.
