In case you haven’t noticed, gourmet burger joints (think Park Burger, Larkburger, and H BurgerCo) are springing up everywhere. Dylan Moore, of Deluxe and Delite on South Broadway, is the most recent chef to join the fray with Deluxe Burger on Colfax Avenue.

Located in a funky, orange-walled space next to Mod Livin’, the mid-century modern-home-furnishings store, Deluxe offers everything from your basic meat-and-bun burger to the decidedly more upscale truffle variety, served with shiitake mushrooms and truffled Swiss cheese.

Stopping in after work last week, I opted for the Stilton burger, a patty served with sweet balsamic onions, an elegant port reduction, and tangy chunks of Stilton. On the advice of the cashier, I added a couple strips of bacon, which gave the burger a nice bit of smoky crunch. Tucked inside a soft kaiser bun, the sandwich was filling and satisfying, thanks to all those layers of flavor.

Rounding out the meal was an order of thick and crunchy hand-cut fries, tossed in fresh thyme and garlic, and prepared my favorite way: with the skin still on.
