Something we’d like to see more of around town is the biscuit sandwich. A weekend in Portland, Oregon, had us scarfing down saucer-sized pastries stacked with fried chicken, honey, mustard, and pickles from Pine State Biscuits. A bit later we eyed Urban Farmer‘s cheddar-bacon biscuit with fried egg, sausage gravy, crispy chicken leg, and lemon marmalade and Violetta‘s grilled egg and cheese with local mushrooms. So many options, so little time.

Of course, here in Denver we have our biscuit go-tos—namely Rise & Shine Biscuit Kitchen and Cafe (check Twitter for the du jour offering) and the Denver Biscuit Company—but we’d like to see more full-service breakfast and brunch spots embrace the pastry outside of biscuits and gravy.
