We were skeptical when we heard that a Prohibition-inspired bar was opening in LoHi; it seemed like a Portlandia episode, with one too many hipster gimmicks. We couldn’t have been more wrong. Williams & Graham is a bar-lover’s bar, where perfectly mixed cocktails are the stars. The extensive menu can be intimidating, so ask the bartender for some guidance; they’ve never led us astray, especially with the Vieux Carré, a zinger straight outta N’awlins. Even better? They treat you like a regular every time you sit down.

Old-school style, low lights, cocktails with a punch, and only a handful of seats: It’s a Denver classic. 1600 17th St., 303-825-1107, www.theoxfordhotel.com/the-cruise-room.html
Cocktail enthusiast or not, you’ll dig the speakeasy-style Green Russell, where every drink is taken seriously. We love giving the bartenders a starting point—“I like Manhattans”—and watching them whip up a crazy concoction on the fly. Even standards like gin and tonics get dressed up with small-batch gin and delicious, homemade cucumber-and-fennel tonic water. Drinks aren’t cheap at $12 a pop, but the pours are heavy, and every now and again, a helluva treat. 1422 Larimer St., 303-893-6505, www.greenrussell.com
