The burger of the day might not be the first menu item that catches your eye, especially when it’s sandwiched between offerings like pan-seared jumbo scallops and a grilled pork chop with tarragon potatoes. Trust us, though: Tables’ burger holds its own. Each day, chef-owners Amy Vitale and Dustin Barrett come up with a different take on their patties, which they fashion in-house by grinding the ends of Boulder Valley New York strips. One day you might relish a version with tomato jam, melted Provolone, and bacon; the next y ou’re mmm-ing about an adaptation with red wine–braised onions and Dijon.
