And there’s one local restaurant that has taken this pork preoccupation to another level. The Berkshire, a year-old cozy spot in Stapleton named for a prized breed of heritage hog, specializes in “swine, wine, and a good time.” Owned by Andy Ganick, the Berkshire serves lunch, dinner, and brunch, and the menus list more than 20 dishes with pork.
