Since moving to Denver almost two years ago, I’ve searched for that comfortable, fits-every-occasion pub or tavern. I’ve craved a place you can swing by after work for a quick dinner or a relaxed spot to settle in for a Friday date night. Well, I’ve found it: Providence Tavern, which sits just to the west of Sloan’s Lake in the tiny enclave of Edgewater. Providence is Denver’s Cheers.
My husband and I sat at the bar—the epicenter of the packed restaurant—and the bartenders didn’t miss a person who walked in the door. I ordered a Great Divide Yeti Imperial Stout from the 14 offerings that include Odell’s St. Lupulin, Asher’s Greenade Organic Double IPA, and Deschutes’ Mirror Pond Pale Ale. As I sipped, I watched the bartenders mix Moscow Mules by the half dozen and lemonades spiked with Leopold Brothers’ Rocky Mountain Blackberry Whiskey.
A regular at the bar sat beside me and he insisted I order the burger. I’m glad I heeded his advice. The ground beef patty (made with Colorado beef) practically melted into the buttery bun. All the burgers are made to order so you can choose to keep it unadorned or dress it up with the likes of jalapeños, goat cheese, or sautéed onions and mushrooms.
The fries, which come by the basketful, are as worthy as the burger. They’re thick-cut and seasoned with the flavors of a crawfish boil. Better yet, they’re served piping hot. You’ll be hard-pressed to share.
