Here’s the good news for your inner pastry chef: Colorado has its own local purveyor of the classic ingredient. Fort Collins–based Rodelle, best known for its vanilla extracts and Madagascar vanilla beans, was founded in 1936 when the Rodelle family moved to Colorado from France. Pick up a bottle of extract at Whole Foods Market or King Soopers to make your own batches of chocolate crinkle and chocolate chip cookies. New Year’s resolution be damned.
