Last we checked, Centro Latin Kitchen and Refreshment Palace executive chef Ian Clark was brewing some seriously good beer out of his 400-square-foot residential garage in north Boulder. How quickly things change: Less than a year after opening BRU Handbuilt Ales, Clark’s commercially licensed, garage-size nanobrewery, he is expanding. By mid-April, Clark plans to open BRU Handbuilt Ales and Eats.
After months of searching for a space, Clark decided on a spot at 5290 Arapahoe Avenue in Boulder. “I can’t even begin to explain how excited I am to open BRU Handbuilt Ales and Eats,” Clark said of his new endeavor. “The opportunity to finally share my passion for all things food and beer—that is going to be pretty amazing.” As far as the food goes, Clark is planning “rustic, approachable cuisine” prepared in a wood-roasted oven. A couple dishes to be on the lookout for: house made goat-milk ricotta with roasted almonds and spiced honey, and oven-roasted shishito peppers with sea salt. In the meantime, you can find BRU beer in restaurants and liquor stores around Boulder.
