5280 is launching an on-going series called Ask a Chef, where we’ll pose questions to local luminaries.

It seems only fitting to kick off the sequence with Jennifer Jasinski, the chef and co-owner of Rioja, Bistro Vendôme, and Euclid Hall. Earlier this week, Jasinski was named (for the second year in a row) a James Beard Foundation Award finalist for Best Chef Southwest. The winners will be announced on May 6 in New York City.

5280: If you had to choose a last meal, what would it be?

JJ: The perfect French baguette with Rodolphe Le Meunier butter and chicken liver pâté with a perfectly steamed, in-season corn on the cob seasoned with salt and Rodolphe Le Meunier butter.

Chime in: What would you choose for your last meal?

Make this: Chef Jasinski is known for her bright, Mediterranean-inspired cuisine. We especially love the preserved lemon peel that she incorporates into several of her dishes. Learn to make it here.
