There was a time when Sputnik, the indie-cool bar/restaurant on South Broadway, served migas. I ordered that Tex-Mex dish of eggs scrambled with crispy tortillas strips a lot—until it was taken off the menu. (Co-owner Allison LaBarge later told me it wasn’t a big seller.) Ever since, I’ve been at a loss as to where to go for the Austin, Texas-spawned breakfast. (More often than not, I rely on the more saucy chilaquiles to fill the void.)

And then, a month ago, Austin-native Brent Thrash opened Moontower Taco at Sixth Avenue and Grant Street. Migas aren’t just on the menu, they’re the first item listed—and they’re served all day long.

Thrash admits that his take on the dish isn’t completely traditional—no peppers or tomatoes scrambled with the eggs and tortilla strips—but it hardly matters. Instead, Thrash imparts texture after cooking with pico de gallo and fresh slices of avocado. Then he tops the taco with the shop’s signature queso made with three cheeses, jalapeño, tomatoes, onions, and spices. Oh yes.

Moontower’s migas are more like a mini burrito than they are a street taco—and that suits me just fine.
