Peter Bredemann is a self-described ice cream sandwich fanatic. But the business model for Peteybird, his ice cream sandwich company, didn’t formulate until one fateful weekend in Crested Butte. Strolling down Elk Avenue, he stopped into an ice cream shop and bought a sandwich treat. It fell apart on the first bite. As is often the case, the ice cream was too hard and the cookie was stale and crumbly. “That was the moment,” Bredemann says. “I just wanted a good ice cream sandwich experience.”

For the past three years, Bredemann has schooled himself in ice cream making and cookie baking—all to perfect the ideal combination of the two. His work has paid off. So much so that he left his engineering job five weeks ago to focus on Peteybird.

Bredemann—who will sell the sandwiches from a customized bike—has created a rotating menu of monthly flavors. April’s treats include an excellent strawberry on sea-salt flecked sugar cookies; an ethereal sweet potato on maple cookies (this one is not to be missed), and a rich chocolate on peanut butter cookies.

He will also make deliveries (for free and by car) for orders larger than a dozen.Twelve mini Peteybirds will set you back $21. That comes out to $1.75 each (a single sandwich normally costs $2). The larger, three-inch treats run $5 apiece. Having sampled April’s flavors, I will gladly pay $21 for a dozen of the refined, whimsical desserts. And delivered to my door? That’s just a bonus.

Party Time: Peteybird officially launches on Saturday, April 27 with a Willy Wonka-style party at the Denver Beer Co. From 2–5 p.m., $1 ice cream sandwiches will be packaged with prizes and paired with beer. Look for other Peteybird events, including one at 2914 Coffee in Jefferson Park on April 28, the Dailey Method in Sunnyside on May 1, and Santa Fe Artwalk on May 3.
