Purchase slab bacon from Nueske’s (nueskes.com) or from your local butcher. Slice into 1-inch-thick segments.
Make chile rub: one part red chile flakes, four parts brown sugar, and a sprinkle of ground black pepper. Coat the slices of bacon in the mixture. Place on a baking sheet.
Roast in a 350° oven for 35 minutes (check for desired doneness every 10 minutes). Remove from oven and place strips in a hot skillet to caramelize the sugar and ensure extra crispiness.
