Spring is in the air—and on the plate. This four-course, farm-fresh meal includes a bread and butter plate with house-cultured butter, a beet tartare, and Colorado trout with fermented fry bread. Each course will be paired with a wine, beer, or cider from the restaurant’s libations list.
