Atlanta chef Brady Lowe began this traveling competition in 2008 as a way to promote the use of heritage pigs, which are humanely raised and fed grass, grain, fruits, and nuts. At this Denver stop, five local chefs—including Nate Singer of Blackbelly Butcher and Cindhura Reddy of Sputino—will each use an entire pig to create tasty barbecue-centric dishes paired with vino from five winemakers, such as a Cabernet Sauvignon from Napa Valley–based Silver Oak Cellars. Proceeds benefit the Piggy Bank, a nonprofit that creates business plans for nascent family farms.
