Daniel Wyman, Director of Operations for Avanti Food & Beverage, has a true passion for the food and beverage industry that has been running through his veins for as long as he can remember. He was raised in a family with a farming background and spent much of his youth gardening with his mom and hunting and fishing with his dad. It was here Wyman’s curiosity for food began. He started working in a family friend’s restaurant at 12 years old and has never looked back. He’s worked in a range of restaurants—everything from ‘mom and pops’ to James Beard award winning establishments—in various capacities from washing dishes to consulting on day-to-day operations, so managing one of Denver’s most popular food halls was a natural fit.
Inspired by European markets and food truck roundups, Avanti Food & Beverage is a modern-day food hall located in Denver’s LoHi neighborhood and coming to Boulder Pearl Street Mall in 2019. The collective eatery is a culinary “think-tank” for chefs to create gourmet dishes at affordable prices, paired with thoughtfully curated craft beer, cocktails and wine. Avanti enables up-and-coming chefs and restaurateurs to establish and execute their culinary vision for a fraction of the cost of a typical brick and mortar restaurant.
When talking about the most rewarding part about working at Avanti, Wyman says, “It’s seeing the personal growth and success of aspiring restaurant owners.” Avanti has seen an 80% success rate in restaurants that get their start at Avanti and go on to open brick and mortar locations. Wyman is excited to see this number grow as Avanti expands into the Boulder market.
