Modmarket owners Rob McColgan and Anthony Pigliacampo spent almost two years perfecting their flatbread pizza dough. That cracker-thin crust, which contains eight whole grains, will become the canvas for a half-dozen pizzas when the duo’s fast-casual eatery opens in Boulder in late August.

The overarching theme behind Modmarket is transparency. The restaurant is laid out like a market with seasonal ingredients set on ice, ready for purchase. Choose from the salad or pizza menus and look on as your meal is constructed, ingredient by ingredient. You’re close enough to see your pizza puff up in the gorgeous brick oven, near enough to watch as your free-range chicken is grilled to order for your salad.


The modern, stark white restaurant is meant to showcase the pristine ingredients and market-fresh dishes. The idea here is this: food is health, health is food. Eat well to be well. Might sound trite, but McColgan and Pigliacampo are dedicated to the cause—just check your receipt for a nutritional breakdown of each item ordered.

The kicker: Prices are shockingly affordable at about $7.50 for a flatbread, $6.50 for a salad, and $2 to $5 for a glass of wine. Here, a $10 check is entirely conceivable, and you’ll feel good about it afterward.
