New Year's Duo: Colorado Bubbly and D Bar Chocolates

December 31 2009, 10:53 AM
This New Year's Eve, in addition to celebrating the coming calendar year, honor our local bounty by toasting with a glass of Trinity Champagne from Palisade's Colorado Cellars and a collection of gorgeous handmade chocolates from D Bar Desserts in Denver. Trinity, currently the only sparkling wine produced in Colorado, is made in the traditional methode champenoise style, which involves a secondary, in-the-bottle fermentation. The result? A semi-dry, food-friendly, brut-style wine with tiny, long-lasting bubbles. Pair the Trinity with a collection of chocolates from D Bar's Handmade Holiday line. Especially elegant (and yummy with bubbly) are the caramel apple, gingerbread, cinnamon roll, dark-chocolate-and-cinnamon-hazelnut-ganache bon bons. D Bar will create a special box with your preferred choices. Another option:  A glass of Trinity with a D Bar gingerbread man. It's an unexpected pairing but a fun way to say goodbye to the holidays and hello to the new year all at the same time. Colorado Cellars, 970.464.7921 D Bar Desserts, 1475 E 17th Ave., 303.861.4710
