Now Open: Rocky Mountain Chili Bowl

After a year of serving homemade green chile from a mobile unit, Rocky Mountain Chili Bowl (slogan: Go Green or Go Home), has opened a brick and mortar in Stapleton's Quebec Square. The November opening coincided with the frigid drop in temperature—and I've gone twice in the last week for belly-warming bowls of green chile.

The casual, family-friendly space serves an affordable menu of bowls, all with mild, medium, hot, or vegetarian chile verde made from Hatch chiles. Early in the day (the restaurant opens at 8:30 a.m. on weekdays, 10 a.m. on weekends), stop by for a breakfast bowl with potato, scrambled eggs, lightly seasoned black beans, and cheddar cheese. For heartier fare during lunch or dinner, try the fajita bowl, with white lime rice, tender pork carnitas, sour cream, and guacamole.

On the Go: Everything on the menu is easily packaged for take-out, including pints or quarts of green chile.
