You might guess that the “T.J. Style Bison" dog at this food truck–esque establishment is named after an owner. But belly up to the bar and one of the three owners/grillers—Brad Arguello, Henry DeMatteis, and Alex Gschwend—will explain that T.J. stands for Tijuana.That’s where their bacon-wrapped bison dog, splashed with mango pico de gallo salsa, crema fresca, queso fresco, mustard, and ketchup, was born. The links from Denver-based Continental Sausage are tops, but the “toss your own” flavored chips—try the Italian spice with Parmesan—make for a combo we can’t pass up. 2730 E.
