Moveable Feast: Cured’s Tour de France Pairings


As the world’s greatest cyclists continue to pedal their way across Europe in the annual Tour de France, Cured, Boulder’s premier cheese, charcuterie, and wine shop, is serving a curated selection of regional tastes to match. Owner Will Frischkorn knows firsthand the best wines and cheeses each region has to offer—in 2008, the former professional cyclist competed in the Tour himself.

The race is traditionally broken into 21 stages, but Frischkorn divided Cured’s pairing menu into seven regions, each corresponding to about three to four days of racing. For each area, he used his knowledge of the European countryside to hand-select a particular cheese and beverage that you would only find at a local market.


As this year’s Tour began in Leeds, England, Frischkorn started with beer—Robinson’s Old Tom Ale—which was paired with a Montgomery cheddar. But after racers hopped the Channel, the beverage switched to wine and the cheeses vary from a goat’s milk blend to stinky cheese and everything in between.
