Chez Thuy Adds Location on Federal


Since opening in 1993, Chez Thuy in Boulder has garnered a legion of loyal fans who swear by chef-owner Thuy Le’s take on Vietnamese, French, Thai, and Indonesian flavors. A staggering 150 combinations (and counting) grace the encyclopedic menu. But thanks to the smaller six-month-old Federal Boulevard outpost, there’s a simpler way to sample Thuy’s cooking.

With a significantly pared-down list of choices, the six-page menu at Chez Thuy Denver focuses more solidly on traditional Vietnamese flavor combinations. Choose from categories of appetizers, mixed salads, wok-tossed noodles, hot noodle soups, rice dishes, fresh spring rolls, special dinner entrées such as Lau Canh Chua, a Vietnamese traditional hot and sour pot, and desserts such as Chuoi Chien Kem a banana ice cream, or Thuy Café Kem, Thuy’s own coffee float.


Tip: If you can’t find your favorite dish from the Boulder menu at the new location, ask nicely and the kitchen crew will likely create it just for you.
