This enchanting Baker restaurant was inspired by the 1800s fairytale of a lumberjack (Woodsley), who built a cabin in the Colorado mountains for the daughter of a French wine producer (Beatrice). Inside, it feels like the tree house of your childhood dreams, replete with wood planks, hanging miners’ lanterns, and aspens literally growing out of the floorboards. There’s no better place to dine fireside than at Highland’s Colt & Gray, which offers two fireplaces and an atmosphere reminiscent of Disney’s Beauty and the Beast.
